DESSICATION
A concentrate of aromas, colours, and flavours.
The traditional desiccation technique has always accompanied our territory. We carefully choose the best grapes in the vineyard and harvest them strictly by hand, then place them in crates and leave them in the drying chamber during winter months. During this process - which lasts about three to four months - the grapes lose between 30% and 50% of their weight, concentrating flavours and all elements that make the great red wines of the area recognisable and inimitable.

A natural process that relies on time and experience: it leads to the transformation of must into wine. During alcoholic fermentation, the sugars in the must are converted by the yeasts into alcohol and carbon dioxide.
